Simply, Yummy Recovery Cookies!
I eat these cookies as a post run snack – they have a great ratio of carbohydrates to protein and are chock full of vitamins and nutrients your body will use as recovery fuel. I enjoy eating mine with a glass of non-dairy milk!
A bit about some of the ingredients:
Teff flour is high in protein and iron and has eight essential amino acids needed for the body's growth and repair. It is high in calcium, manganese, phosphorous, iron, copper, aluminum, barium, thiamin, and vitamin C.
Chia seeds are a good source of healthy omega-3 fatty acids, carbohydrates, protein, fiber, antioxidants, and calcium.
• ½ cup Peanut Butter – natural with no additional oil added (or any nut butter you prefer)
• ¼ cup Teff flour
• ¼ cups Maple Syrup (or any other sweetener you prefer)
• 1 tbsp. chia seeds
• 1 tbsp. flax seeds
• Dried cherries, nuts, seeds, coconut etc.!
Mix all ingredients together, form into balls and press to flatten using a fork!
Bake for 10-12 minutes at 350 degrees!
